Açai Bowls with Sharon’s Granola

Last week I received a delivery that was the nicest surprise I’d gotten in a long time: my mother-in-law, Sharon, had mailed Reese and me two large containers full of her gorgeous homemade granola. She included this pretty note listing all the ingredients, so I’d know it was 100% vegan! Isn’t she the sweetest lady? I couldn’t have asked for a better gift; we both love granola but never make our own, and are thrilled to have the homey taste of love on hand for snacks and breakfasts, hasty or leisurely.

Speaking of breakfast, Reese and I met in Santa Cruz, which boasts lots of fantastic breakfast spots, largely on account of the surfers who work up prodigious appetites early in the morning. As anyone who has ever visited that beautiful city on the beach can tell you, one of the best breakfasts the city has to offer can be found at Café Brasil.

My favorite item on the menu is their açai bowl, which is a generously sized sweet smoothie made with açai (duh) and strawberries and topped with granola, sliced bananas, berries, and a little Brazilian flag. It’s served in a footed bowl with a soup spoon and traditionally enjoyed with lots of coffee. This one here is my version, using Sharon’s incredible granola. It’s not quite berry season yet, so I used frozen ones in the smoothie and stuck to topping them with banana only. They were a satisfying way to begin the long day ahead.

Why a long day? I’m writing this post from the air en route to Miami! We missed our connecting flight and caught a few short hours of sleep in a Dallas airport hotel before boarding a 4:15am shuttle to catch a 5:45am flight from Dallas to Miami. We also spent a few choice hours this weekend wrestling verbally with the staff at the hotel where we are staying about the presence or absence of our reservation, which was confirmed last week.

Anyway, we are here now and got in a little beach time. It’s not all fun and games; I have 2 days of interviews scheduled at the Miami Miller School of Medicine. But I’m sure we will find a way to squeeze some fun in to as many places as we can. Recommend places for us to go, we’ve never been before!

Açai Bowl

Serves 2

Ingredients

  • 3/4 cup iced green tea
  • 1/2 cup coconut water
  • 1/4 cup coconut creamer
  • 1 banana
  • several handfuls fresh spinach
  • 1/2 medium orange
  • 1 cup blueberries
  • 1 frozen açai packet, unsweetened
  • 2 scoops Vega protein powder (or whatever you like)
  • Dash stevia

 

Directions

Blend all ingredients together for a few minutes. The açai packets take awhile to blend, so it’s fine to be generous with time.

Pour into bowls and top with sliced bananas and about 1/4 cup granola.
